Apple Cinnamon Rasin Cookie

  • 4 apples
  • 1 tbsp lemon juice
  • 1/4 cup olive oil
  • 1 3/4 cup almond flour
  • 1 egg
  • 1tsp baking soda
  • 1tsp vanilla extract
  • 1tbsp cinnamon
  • 1/2 cup raisins
Preheat oven to 350F
Puree apples and lemon juice and a dash of cinnamon.
In a bowl mix together all ingredients (including apple mixture but not the raisins)
Once mixed well fold in raisins with a spatula 
Lightly grease cookie sheet with olive oil
Drop a spoonful of batter about 1in apart from one another
Bake for 10-15 minutes
