Paleo Pancakes!

I have yet to master the paleo pancake however Family Living Simple has!
Check out this great recipe next time you're feelin like a pancake!


Paleo Pancakes


Ingredients:
  • 3 eggs
  • 1/3 Cup Coconut Milk (Full Fat)
  • 1/2 Cup Applesauce (A banana would also work really well)
  • 1 Tablespoon vanilla
  • 1/2 teaspoon baking soda
  • 1/2 Cup Coconut flour
  • coconut oil for frying
  • Cinnamon

Directions:

Mix all your wet ingredients together then add in flour and baking soda. Heat oil in a pan and cook away. These are really good with berries or almond butter as a topping. If you want enough for left overs just double the recipe. Also, depending on how you like your pancakes. Thicker vs. thinner you might want to add a little more coconut milk.
