Found this recipe on CrossFit Genesis
Coffee Creamer
1 can of room temp full fat coconut milk (Thai Kitchen works well)
1 egg
1 tsp vanilla
2-4 Tbs melted coconut oil
First drain the water from the bottom of the coconut milk can. Then
in add the remaining coconut milk to a food processor along with the egg
and vanilla. Once the machine is running slowly add the oil. Make sure
everything is well combined. This will look frothy and foamy, place in a
container and store in the fridge. It will take a few hours or
overnight to set up, it will not be pourable. Add this to your coffee by
the spoonful or enjoy with mixed berries for a whipped cream
replacement.
