Almond Butter Dessert Bars modification from Fast Paleo

I found this recipe from Fast Paleo and absolutely love it! Here is my version :)

  • ½ cup of almond flour
  • ½ cup almond butter
  • 2 cups of mixed nuts (pecans)
  • ½ cup of unsweetened dried coconut
  • ½ cup of olive oil
  • 1/3 cup of honey
  • 1 t of pure vanilla
  • 1 cup of raisins
  • 1 cup of dried apples
  • 1 T cinnamon
 Toss pecans in food processor or blender and give them a few pulses till they are a coarse meal and stir into the almond flour in a medium bowl.

In a microwave safe bowl, warm up the olive oil, almond butter and honey for about 45 seconds, in the microwave and stir them together well. Add the cinnamon and vanilla. mix till all creamy. Fold the nut mix into the honey mix then add the apples and raisins. Pat into an 8 x 8 baking dish and sprinkle on the dried coconut and stick in the fridge for 1 hour or more till nice and solid. Cut into squares and ENJOY!

It's a delicious treat! It's already made for the crossfit Oliver outing tomorrow! I can't wait for you all to try it!
