Paleo Pecan Pie

Ingredients:
*Crust:
  • 1 1/2 cups almond flour
  • 1/3 cup olive oil
  • pinch of sea salt
  • 1 tablespoon cinnamon
  • 2 tablespoons honey
*Filling:
  • 3 free range eggs
  • 1/2 cup honey
  • 1 teaspoon pure vanilla
  • 2 teaspoons cinnamon
  • 1 teaspoon and 1 tablespoon coconut flour
  • 3/4 cup chopped pecans
  • 1/3 cup whole pecans
  • 12 pitted dates
Directions:
*Crust:

  • preheat the oven to 350 degrees
  • lightly grease pie pan
  • mix all ingredients together with a spoon (make sure all almond flour has been moistened)
  • dump dough into the middle of the pan and spread out and onto the edges of the pie pan - it is not going to be perfect and will slide down the sides a little- it's okay!
  • bake for 10 minutes
*Filling:
  • while the crust is baking...
  • in a large bowl whisk together eggs, honey, and vanilla - set aside
  • in a food processor- chop dates (about 1 minute)
  • add dates to the mixture
  • stir in cinnamon, coconut flour, and chopped pecans- stir well
  • pour filling into pie crust 
  • add remaining whole pecans to the top of the pie
  • bake for 35 minutes 
  • let cool and enjoy!

  1. hey! thanks for all the recipes. fellow thyroid problem-haver over here, and sort of kind of paleo. mostly. i eat quinoa and some hummus on occasion mostly because i can't eat red meat at all, but i digress. i love the blog, please keep it up!

  3. Could I leave out the dates and use more honey instead? Or possibly (gasp!) sugar? (This is for holiday not-completely-paleo consumption.)
