*Crust:
- 1 1/2 cups almond flour
- 1/3 cup olive oil
- pinch of sea salt
- 1 tablespoon cinnamon
- 2 tablespoons honey
- 3 free range eggs
- 1/2 cup honey
- 1 teaspoon pure vanilla
- 2 teaspoons cinnamon
- 1 teaspoon and 1 tablespoon coconut flour
- 3/4 cup chopped pecans
- 1/3 cup whole pecans
- 12 pitted dates
*Crust:
- preheat the oven to 350 degrees
- lightly grease pie pan
- mix all ingredients together with a spoon (make sure all almond flour has been moistened)
- dump dough into the middle of the pan and spread out and onto the edges of the pie pan - it is not going to be perfect and will slide down the sides a little- it's okay!
- bake for 10 minutes
- while the crust is baking...
- in a large bowl whisk together eggs, honey, and vanilla - set aside
- in a food processor- chop dates (about 1 minute)
- add dates to the mixture
- stir in cinnamon, coconut flour, and chopped pecans- stir well
- pour filling into pie crust
- add remaining whole pecans to the top of the pie
- bake for 35 minutes
- let cool and enjoy!
hey! thanks for all the recipes. fellow thyroid problem-haver over here, and sort of kind of paleo. mostly. i eat quinoa and some hummus on occasion mostly because i can't eat red meat at all, but i digress. i love the blog, please keep it up!

ReplyDeleteCould I leave out the dates and use more honey instead? Or possibly (gasp!) sugar? (This is for holiday not-completely-paleo consumption.)
