Banana Bread Bars

It's been crazy around here and I haven't had time to post my latest recipe but here is one I found that looks easy and delicious- It is totally something I would make! I found it from Primal Women in the Kitchen Yum Yum - - eat up.


Banana Bread Bars

 
Ingredients
2 eggs
3 over-ripe bananas-mashed (A banana that is more brown than yellow is over-ripe. Great for baking, but no longer very pretty to eat... over-ripe bananas are super sweet and very soft.)
1c. Coconut flour
1c. Almond flour
1/2c. Coconut milk
1/2c. olive oil
1/2c. chopped pecans
1/4c. all natural/unsweetened apple sauce
4 truvia packets - Note from Heather (don't even think of adding this in your recipe :) ) I don't know if this is paleo but I wouldn't touch it . . so Skip this ingredient please.
1 tbsp. vanilla

Directions
Preheat oven to 350*. Grease a 9x13 baking pan. Combine eggs, oil, coconut milk, truvia, vanilla, and apple sauce in a large bowl. Gradually add in the coconut and almond flour. Mix into a thick paste-like dough. Mix in the 3 mashed bananas. Finally, mix in the pecans to the batter. Cook for 45 minutes or until the top has browned and you can insert a knife and remove it cleanly (I live at a high altitude so adjust as needed). Allow to cool and ENJOY!


***Note: These are banana bread BARS and not banana bread. They will much thinner and more moist.
