Banana Bars
(ignore the missing piece in the picture- I had to try it)
Ingredients:
Filling:
3 whole eggs
1/2 cup honey
3 bananas
1/2 cup olive oil
1 Tbsp orange juice
Crust:
1 cup almonds
1 cup pecans
1/4 cup honey
1/2 cup olive oil
2 eggs
Directions:
Preheat oven 400 degrees
In a food processor grind up the almonds and pecans until they are in fine pieces
Mix all crust ingredients together and spread over a lightly greased 8x12 pan
Bake for 15-18 minutes and set aside to cool
While the crust is baking in a bowl mix eggs, honey, and bananas
Heat in a pan on high for 3 minutes, stir frequently (or the bananas will burn)
Add olive oil and let thicken for a few minutes
Refrigerate until cool
Once crust is cool spread the banana topping over the crust and keep in the refrigerator
