Key Lime Pie :Primal Women in the Kitchen

I haven't had a chance to make this yet but it looks super easy and super yummy- looks like I am getting behind on my baking . . . I need more almond flour :)

Key Lime Pie


Ingredients:
Crust:
1.5 cups sliced or whole almonds
5 pitted dates
1 Tablespoons Olive Oil
Put all ingredients into a food processor or blender. Blend it until it is almost like almond butter, a few chunks are fine. Grease a standard pie pan with olive oil and press the mixture into the bottom of the pan. Allow it to bake alone in the oven for around 9 minutes and then remove.

Pie Filling:
1 1/2 tbsp of lime zest (use a real lime and get to grading)
1/2c 100% lime juice
4 tbsp agave syrup (can also use honey)
2 tbsp coconut flour
3 eggs
1c Coconut Milk
1/2c unsweetened coconut flakes
Mix all ingredients well with a whisk. Pour mixture into your already prepared pie crust and put back in oven for another 25-30 minutes or until the filling has set up and does not jiggle too much when you move it. Cover the top with coconut and briefly return it to the oven until the coconut begins to brown. Remove and allow it to cool in the refrigerator.
