Paleo Apple Brownies

Ingredients:
  • 2 cups almond flour
  • 1/4 cup cocoa powder
  • pinch of sea salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 2 free range eggs
  • 1/3 cup honey
  • 1 cup apple sauce or pureed apples
  • 3 handfuls Enjoy Life chocolate chips
Directions:
  • Preheat your oven to 350 degrees F
  • mix all ingredients with a spatula in a large bowl until combined
  • stir in chocolate chips
  • lightly grease a cake pan with olive or coconut oil
  • pour batter into pan and bake for 15-18 minutes
  • let cool and serve

Paleo Pineapple Cupcakes!

Ingredients:
  • 1 cup almond flour
  • 1/2 cup coconut flour
  • pinch of sea salt
  • 1 t baking soda
  • 1 t cinnamon
  • 1/3 cup almond butter
  • 1/3 cup honey
  • 2 free range eggs
  • 1/2 cup olive oil
  • 1 t pure vanilla
  • 1 t orange extract
  • 1/2 cup juice of pineapple
  • 12 small chunks of pineapple
Directions:
  • preheat oven to 350 degrees and line cupcake tins with cupcake liners
  • in a large bowl add the first 5 ingredients and stir
  • in a separate microwave safe bowl, heat up the almond butter and honey for 45 seconds then combine in the flour mixture
  • add the rest of the ingredients except the chunks of pineapple and mix until smooth
  • fill each (12) cupcake tin 1/2 way with the batter
  • place a pineapple chunk in the middle of each 1/2 way filled cupcake 
  • on top on the pineapple chunk use the rest of the batter and cover the pineapple so you cannot see it
  • bake for 12-15 minutes
    cupcake tins 1/2 way filled and pineapple in the middle

Paleo Fudge

This is super yummy! Don't eat too much though- it will still cause a tummy ache! :)

Ingredients:
  • 3/4 cup almond butter
  • 1/2 cup coconut oil
  • 1/4 cup honey
  • 1/2 cup cocoa powder
  • 1/2 cup unsweetened shredded coconut
  • 1/2 teaspoon pure vanilla
  • 1/2 cup Enjoy Life chocolate chips
Directions:
  • line a 9x9 baking pan with parchment or wax paper
  • in a microwave save bowl combine almond butter, coconut oil, and honey - heat for one minute
  • then in a large bowl add cocoa powder, melted ingredients and vanilla and mix until smooth
  • add in the coconut and make sure all coconut is covered
  • sprinkle in the chocolate chips and give it a few stirs
  • pour mixture on top of the parchment paper and let sit in the refrigerator for 2-3 hours
  • cut into small pieces and ENJOY!

Paleo Pumpkin Pie

After 4 previous attempts- this is what I came up with!

*Crust:

Ingredients:
  • 1 1/2 cup almond flour
  • pinch of sea salt
  • 1 tablespoon cinnamon
  • 2 tablespoon honey
  • 1/3 cup olive oil
 Directions:
  • preheat the oven to 350 degrees
  • lightly grease pie pan
  • mix all ingredients together with a spoon (make sure all almond flour has been moistened)
  • dump dough into the middle of the pan and spread out and onto the edges of the pie pan - it is not going to be perfect and will slide down the sides a little- it's okay!
  • bake for 10 minutes
*Pie Filling
Ingredients:
  • 1 can pumpkin (the small can not the large one)
  • 2 free range eggs
  • 1/3 cup honey
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1 teaspoon pure vanilla
  • 1/4 cup coconut milk (yes, the kind from a can- not So Delicious or the "light" version- pure coconut milk)
Directions:
Ignore the missing piece- it was yummy :)
  • in a large bowl, whisk together eggs, honey, vanilla and coconut milk
  • stir in pumpkin, pumpkin pie spice, and cinnamon (use a spatula/spoon)
  • mix until it looks creamy 
  • once pie crust is done...
  • pour filling into the baked pie crust and smooth out the top
  • put back into the oven for 45-60 minutes (do the toothpick test) 
  • let cool then ENJOY! :)

"Old" Choclate Chip Cookie Balls

These are super easy!

Ingredients:
  • 3 cups almond flour
  • 1/2 cup olive oil (microwaved for 30 sec)
  • 1/2 cup almond butter (microwaved for 30 sec)
  • 1/2 cup honey
  • 2 free range eggs
  • 1 t baking soda
  • 2 t pure vanilla
  • 1 T cinnamon
  • 1 cup Enjoy Life chocolate chips
Directions:
  •  preheat oven to 350 degrees F
  • In a large bowl combine warm olive oil, almond butter, eggs, and vanilla - mix until creamy
  • stir in almond flour and baking soda
  • once well blended, add enjoy life chocolate chips
  • use an ice cream scooper and scoop batter onto an ungreased cookie sheet
  • bake for 12-15minutes

Paleo Banana "Cream" Pie

I finally hit 3,000 views so I went into the kitchen and whipped up something delicious!!

*Crust:
Ingredients:
  • 1 1/2 cup almond flour
  • pinch of sea salt
  • 1 T cinnamon
  • 2 T honey
  • 1/3 cup olive oil

  • preheat the oven to 350 degrees

  • mix all ingredients together with a spoon (make sure all almond flour has been moistened)

*Filling:
Ingredients:
  • 2 bananas
  • 2 free range eggs
  • 2/3 cup coconut milk (if you have a full can- set the rest in the freezer while your pie bakes and use as a topping)
  • 1/4 cup honey
  • 1 t pure vanilla
  • 3 T coconut flour
Directions:
  • While the pie crust is baking, in a large bowl, combine bananas, eggs and honey and blend until creamy
  • then add the milk eggs and coconut flour and mix on low for about 1 minute
  • once the crust is done pull out of the oven and pour filling into the pie crust and bake again for 25-30 minutes
  • when the pie is done it shouldn't be "soupy" but have a cheesecake type feel/look to it
  • let cool for 10 minutes
  • refrigerate for an hour or so
  • then enjoy! I threw the rest of my coconut milk into the food processor for about a minute to add some air and poured it on top of my pie! yummy!

Paleo Pumpkin Roll

I got this recipe from the cavegirl dish but changed it just a little bit because I couldn't get the recipe to work the way I wanted it to.

Ingredients for "cake":
  • 3 eggs
  • 2/3 cup pumpkin
  • 2/3 cup honey
  • 1 1/4cup almond flour
  • 1 t baking soda
  • 1 T ground cinnamon
  • 1/2 cup chopped walnuts
  • 1t pure vanilla
Ingredients for "filling":
  • 1 bag of unsweetened shreaded coconut
  • 1/2 can of lite coconut milk
  • 1T coconut oil
  • 2-3 heaping T almond butter
  • 1/4 cup honey (play with this)
  • 1 heaping T cinnamon
Directions for "cake":
  • preheat oven to 375 degrees
  • whisk eggs in a small bowl
  • add all cake ingredients together (minus the walnuts) and blend until smooth
  • line a cake pan with parchment paper and pour the batter ontop
  • then sprinkle the walnuts over the batter
  • bake for 15 minutes
  • then let cool (I threw it in the freezer for about 15 minutes)
Directions for "filling":
  • While the cake is baking throw the coconut into the food processor and let process for about a minute before adding the rest of the ingredients
  • play with the amounts of almond butter to get the texture you want (it should be creamy but not runny)
  • set aside until cake is cool
More Directions:
  • Once cake is cool, take cake (on the parchment paper) out of the baking pan itself and set on the counter
  • spread the filling overtop
  • then carefully roll the cake from the thinnest end (I used the parchment paper to lift and roll the cake rather than my hands .. if that makes sense at all)
  • once rolled carefully wrap the roll in saran wrap and chill for 30-40 minutes before enjoying :)
